A rich Vichyssoise (Leek cream) that you can not stop trying, you will love!
-4 large and tender leeks
-1 large potato
-1/2 litre of prepared or homemade vegetable broth
-200 c.c. of milk
-200 c.c. of cooking cream
-Extra virgin olive oil
We will use only the white part of the leeks. We clean and sliced.
We do the same thing with the potatoes and onions.
We put in a wide Pan 50 GRS butter and 2 tablespoons oil.
We offer you poach the vegetables to fire medium for a few 15 minutes, stir occasionally. Season.
Pour the broth, cover and let Cook for 25 minutes.
We remove from fire, grind fine and passed by the Chinese. Back to put in the pot.
Add milk and cream and let reduce 5 minutes minimum heat. If it stay liquid can thicken it with cornstarch or of potatoes according to package instructions.
Salt to taste. We keep hot.
Sauté the prawns in a little oil and place them on top of the cream, serve with a thread of oil and a bit of spring onion (optional).
