Vegetable Kabobs

The skewers are a very practical and simple way to cook vegetables. When marinating add an original touch to your taste. We encourage you to enjoy alone or as an accompaniment to all kinds of grilled meats.

We need:
¤1 large red pepper.
¤1 large green pepper.
¤1 large orange pepper.
¤1 zucchini or large zucchini.
¤4 small eggplants.
¤2 medium red onions.
¤2 tablespoons lemon juice.
¤1 tablespoon olive oil.
¤1 clove crushed garlic.
¤1 teaspoon dried rosemary.
¤Salt and pepper.


Cut peppers in half, deseed and cut into pieces about 2.5 cm. Discard ends of zucchini, cut it in half lengthwise and then into pieces about 2 cm. We place the peppers and zucchini in a bowl and reserve.
Cut the ends of the eggplants and cut lengthwise into quarters. Peel onions and cut into 8 wedges equal. Add to the bowl where the peppers and zucchini. In a bowl mix lemon juice with oil, garlic, rosemary, salt and pepper. Pour on the vegetables and mix well. Heat a grill or grill to medium. Ensartamos vegetables on 8 skewers sticks. Roast on the grill for about 10 to 12 minutes, turning several times, until vegetables are tender and golden. We let drain on paper towels skewers and serve.

To prevent the skewer sticks burn while cooking, before we let them use them soak in cold water for at least 30 minutes.
