Ingredients for 4 people: following a balanced diet of 1500 calories a day
-1 chopped large onion (or 3 tablespoons of fried onion, dehydrated, or half and half)
-1 Cup or a bit more broth (or 1 level measuring of Knorr bouillon dissolved in water)
-1 splash of brandy (or 1 Cup of white wine)
-2 tablespoons oil extra virgin olive (3 tablespoons if you do not use dried fried onions)
-1TSP. cornstarch (optional)
Place 2 tablespoons of oil to be heated in a pan (1 tablespoon if using dried fried onions). Salt and pepper the chicken breasts and Brown over high heat, some on all sides. Remove from the Pan and reserve.
Add the onion, leek and saute well both; Add the tablespoon of remaining oil if necessary. (If you choose to fried onion dehydrated, add it along with the broth).
Add the chicken breasts, brandy or wine and let it evaporate the alcohol.
Add the broth, bring to a boil and lower the heat to make it cook slowly for 10 to 15 minutes depending on how big that are chicken breasts.
Go giving gentle motion to the pan to help that the sauce emulsifies.
Remove the chicken breasts and set aside.
Well grind the rest into the sauce and if this be a little liquid can thicken it lightly with 1 teaspoon of cornstarch.
Heat all together again and serve, decorating the dish to taste.
