Cut the Eggplant and let stand an hour emdia with salt. Rinsed and in a non-stick pan pour oil (very little) and the Eggplant cubes are browned slightly.
Then, add the peppers and onion, mix, cover and leave on low heat about 20 minutes. We review halfway through the cooking time to mix and add the oregano and black pepper to taste.
Don’t we take oregano from the beginning so that it does not burn and lose the scent.
It can be served warm or cold.
