When hot put the duck breast with part of the fat down, with strong fire.
Let do very well and turn, lower the heat a little and let do the other side, but without going over.
We got the duck breast and reserve.
If you have released much fat removed a little, but leave enough to make the sauce.
Add jam to fat and stir, add the cream and let reduce along with some raspberries.
We trinchamos the duck breast, we season with salt.
We serve and napamos it with the sauce.
