The most important is that the kidneys are clean. As I guess that you already know the kidneys of any “animal” including us, they serve to filter the fluids of the body and once fact this produces urine. So not that flavor to be clean, it will prevail over any other. I hope to not be taking you want to prepare this delicious dish. So I recommend that you use young animals such as lamb or veal kidneys. Larger animals are not very appropriate and it is more difficult to carry out them with guarantee of success.
-750Gr. of lamb or veal kidneys
-3tablespoons of Virgin olive oil
-2 included scallions as verde(si no tenéis poned 1/2 cebolla más)
-2cloves of garlic
-1Cup of sherry
-1/ 2 TSP sweet paprika
-A bit of black pepper
-Optional: chilli pepper or chili
To clean them properly, cut them into slices and put them in a container with a glass of water a handful of salt and 2 dl of vinegar. So leave them for about 15 minutes. Now place them in a saucepan inverted lid, boll or similar. Put a pot with two or three fingers of water to the fire and place the inverted lid or the boll on top of this, such that give water vapor and warm them. Kidneys iran releasing the liquid gradually.
This delay is about 10 minutes. Now put the kidneys in a colander and wash them thoroughly with plenty of cold water (I recommend, under running cold water). Of course the water out is useless. In a mortar or Almeriz put a little salt and the garlic and parsley. Mash it, should be a paste.
Place the olive oil in a skillet and Add onion and chive well chopped. When this transparent (i.e. that is tender) add the kidneys and give it a few turns. Now add the pepper, chili or chili (optional), paprika and flour. Continue giving it a few turns and wet (enter) the water and add the mixture of garlic and parsley. Move the set and leave to cook a 5 to 8 minutes. Sherry is added just before serving
