-3 sheets of pasta brick
-1 small Eggplant
-shredded mozzarella cheese
-salted into thin slices ham
Cut the leek into sliced and saute with a drizzle of olive oil.
Peel the carrots and cut them into small pieces, also the zucchini and eggplant.
When the leek is doradito add other vegetables, season and stir until they are done.
On a sheet of pasta brick put a slice of salty ham, above a spoonful of mascarpone, followed by a couple of handfuls of mozzarella and, finally, add the vegetables.
Closed it by bending the ends first and then the sides.
After 10 minutes we already remove from the oven and serve with a little salad.
